I was in the mood to try something a little different recently and ended up with this Red Velvet Cookies from Cake Mix.Everyone loves red velvet cake, right?

One of my favorite candies is M&M's, so you can probably imagine how much I like to incorporate them into my baked goods! Over the past year I have experimented with M&M's .

If you love red velvet cake, you will positively go bonkers over these M&M's cookies because they're rich and decadent and the M&M's add a chocolaty crunch that chocolate chips just can't provide!

I recently made some cookies for a cookie exchange and felt a little guilty afterwards when I realized that I didn't have enough leftover to take any to my mom. You see, my mom is my biggest supporter when it comes to my blog.

My Mom is my Biggest Fan!

She is always sharing my blog posts on Facebook with her friends, encouraging me when I am feeling a little stressed out, and she helps me SO MUCH with Angeline! Whenever I have to travel for blog trips, she always helps Chris by picking up Angeline after school so that he doesn't have to leave early.

Sometimes she takes me to the airport, she takes care of the dogs when my sister doesn't housesit for us; really, I could write an entire ode to mom blog post because of all that she does for me!

Everyone loves Cake Mix Cookies

Instead of that, I decided to make her a batch of her very own cookies. Angeline thought it was a good idea too, and you know she's 16, and teenagers are always right. ALWAYS, just ask her.

I headed down to Walmart after printing offa M&M's couponand picked up my "supplies" for this special project - we have a brand new Walmart in our neighborhood so I've been going there for lots of our groceries lately!

How to make these Easy Cookies

We love this super simple easy Red Velvet Cookies from Cake Mix because they have only 4 ingredients and are ready in under 15 minutes - including the time it takes to mix them up!

Ingredients you will need to make our Easy Cake Mix Cookies

  • 115.25 oz box red velvet cake mix- make sure it's a "premium" mix
  • 2eggs
  • ⅓cupvegetable oil
  • 2cupsplain M&M's

HINT: I used melted butter instead because I don't always use vegetable oil. You can also substitute an equal amount of liquid coconut oil or unsweetened applesauce!

Instructions for how to make Cake Mix Red Velvet Cookies

Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.

In a large bowl, mix cake batter, eggs an oil (or whatever you used as a substitute) until you have a wet dough.

Do not expect this to look like a cake batter because you are not making a cake! Your dough will look like a cross between cookie dough and cake batter, and that is exactly what you want.

Now stir in the plain M&M's.

Then scoop by heaping teaspoonfuls and roll into ball in the palm of your hand. Be warned, your hands will get messy. This cookie dough is not very neat! ha!

Drop about two inches apart on your parchment-lined cookie sheet and bake at 350 degrees F for 9 minutes.

Leave your cookies on the cookie sheet for a minute so that they have a chance to harden up a bit, as they will be very soft and pliable when you remove the from the oven.

Using a spatula, remove your Red Velvet Cookies from Cake Mix to a cooling rack.

What If I don't have Cooling racks?

If you do not have cooling racks, don't worry! Just slide the entire parchment paper off the cookie sheet directly onto the counter and the cookies can continue cooling there. Just add a new sheet of parchment paper to the cookie sheet and repeat!
