Coffee cake, muffins, or donuts…my husband loves baked goods that go great with coffee. So much so that if he had all of these in front of him, he would have a hard time picking. But there is one way to make his selection easier — if I addKahlúa to any one of them…oh man, the deal is sealed.

I’ve wanted to surprise him with homemade Kahlúa donuts for a while now, butI really dislike frying foods. You might think I don’t like frying for health reasons. Nope…that’s not why. I don’t like frying foods because it’s SO BORING. You really can’t multi-task while frying…all your attention had to be on the food you are cooking. If something needs frying, I usually enlist the help of my husband who’s happy to do it, but that doesn’t work when you want to surprise him with your creation.

Afew months ago, I picked up two almost new donut pans at our local thrift store. Just like that, the world of baked donuts opened up to me. I started working on some new baked donut recipes, including extra special ones that have Kahlúa in them.

The recipe starts with sifting together the dry ingredients. In a separate bowl, eggs are lightly beaten and then Kahlúa is added to the eggs. I used originalKahlúa, but you could use any flavor you like. I thinkKahlúa French Vanilla or Kahlúa Pumpkin Spice would be a great choice in these too.

To make filling the donut pan easier, I filled a pastry bag with the filling and filled all areas fairly full. I don’t go all the way to the top, but I definitely filled them more than 75%.

They are quick to bake — only taking about 15 minutes. Let them cool a bit in the pan and then pop them out and let them continue cooling.

I glazed ourKahlúa Donuts with a ChocolateKahlúa Glaze. After mixing up the glaze, I dipped the tops into it and set them on a cooling rack to allow the glaze to set.

Now, the best part: eating! We went all out with Kahlúa — we enjoyed our donuts withKahlúa Hot Coffee.

To makeKahlúa Hot Coffee, you just need2 partsKahlúa to 3 parts hot coffee. Serve it in a mug and add milk or cream if you wish. Delicioso!

Baked Kahlúa Donuts

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 2 eggs (lightly beaten)
  • 1/2 cup Kahlúa coffee liqueur
  • 1/2 cup milk
  • 2 tablespoons oil

Kahlúa Chocolate Glaze

  • 1 1/2 cups powdered sugar
  • 4 tablespoons cocoa powder
  • 3 tablespoons milk
  • 1 tablespoon Kahlúa

Instructions

  1. Preheat oven to 350 degrees F. Spray donut pan with cooking spray.
  2. In a large bowl, sift together flour, sugar, baking powder, and salt. In a small bowl, whisk together the eggs, Kahlúa, and oil. Stir the milk/Kahlúa mixture into the flour mixture until combined.
  3. Fill a pastry bag with batter. Cut off a small portion of the tip and dispense batter into donut pans at least 3/4 of the way full (or slightly more). Bake for 15 minutes, or until browned. Turn the donuts onto a cooling rack and allow to cool completely.

For glaze

  1. In a small bowl, whisk together powdered sugar and cocoa powder. Whisk in milk and Kahlúa until smooth.
  2. Dip tops of donuts into the glaze, allowing excess to drip off. Return to cooling rack to allow glaze to set.
