Nothing says fall like the scent of gingerbread and cinnamon spiced apples drifting through the house. There is also no better way to get everyone up and out of bed on a chilly weekend morning than with a breakfast filled with those yummy flavors—and scents! I have said before that I love gingerbread—and my gingerbread cookies and gingerbread waffles are always big hits on the home front. This morning, I wanted gingerbread and also needed to use up a few apples—it was time for Gingerbread Pancakes with Roasted Cinnamon Apples.

Gingerbread Pancakes withRoasted Cinnamon Apples Ingredients
Gingerbread Pancake Ingredients

2c. All Purpose Flour (or 1 c. All purpose and 1 c. Whole Wheat Flour)
3tsp. Baking Powder (I use Bob's Red Mill Baking Powder)
½tsp. Salt
½tsp. Cinnamon, ground
1/8tsp. Cloves, ground
¼tsp. Ginger, Ground
2Large Eggs, lightly beaten
1¾ c. Milk
1Tbsp. Granulate Sugar or Sugar Alternative
2Tbsp. Molasses (I use Grandma's or Wholesome Sweeteners)

CookingOil or Spray

RoastedCinnamon Apple Ingredients

2-3Large Gala Apples, Peeled, Cored and Chopped

1/3c. Apple Juice

1/3c. Water

1/3c. Light Brown Sugar

3Tbsp. Butter, cubed

1tsp. Ground Cinnamon

Roast the cinnamon apples. Preheatoven to 425. Spray a 9 inch, square baking dish with cooking spray.Arrange the apple pieces in the pan, spreading them out as much aspossible. In a small saucepan, add the juice, water, the brown sugar andthe butter. Stir over medium heat until butter and sugar are melted andthe mixture is fully combined. Add the cinnamon to the saucepan and whiskto combine. Pour the liquid over the apples. Bake in preheated ovenfor 25-30 minutes or until apples are tender, basting every 10 minutes withspiced sauce from the pan.

Prepareand preheat the griddle or skillet.While the apples are roasting, preheat a medium sized skillet or griddle andlightly grease with cooking oil if worried about it sticking.

Preparethe gingerbread pancake batter.In a large mixing bowl, combine the flour, baking powder, salt, andspices. Thoroughly mix to incorporate the spices completely. In amedium mixing bowl, combine the eggs, milk, and molasses. All at once,stir the wet ingredients into the dry ingredients until well blended.

Cookthe pancakes. Pour desired amount of batter ontogriddle or skillet. Fry until goldenbrown on each side. Remove the pancakes from the griddle and keep warm.

Serve the gingerbread pancakes withcinnamon apples. Drizzle apples and spiced sauce over each individual stackof gingerbread pancakes. Top withwhipped cream and additional cinnamon, if desired.
